A surefire crowd-pleaser, with the added convenience of heating and serving in a slow cooker.
lb lean (at least 80%) ground beef
clove garlic, minced
boxes (16 oz each) Mexican prepared cheese product with jalapeño peppers, cut into cubes
cans (10 oz each) diced tomatoes with green chiles, drained
cup chopped green onions (8 medium)
oz tortilla chips
In 10-inch skillet, cook ground beef and garlic, stirring frequently, until beef is thoroughly cooked; drain. Spoon into 3 1/2- to 4-quart slow cooker. Add cheese and tomatoes; mix well.
Cover; cook on Low heat setting 3 to 4 hours, stirring after 2 hours.
Before serving, stir in onions. Serve with tortilla chips.
The cheese in this recipe is a loaf-shaped shelf-stable product. For less heat, use the plain variety without the jalapeño peppers.
