Slow-Cooker Spicy Beerbacoa Tacos

Muir Glen® tomatoes and Old El Paso® taco shells come together in these spicy beef tacos - a tasty slow cooked Mexican dinner.

Ingredients

Beef

1
fresh beef brisket (not corned beef), 2 to 3 lb, trimmed of fat

teaspoon salt
1/4
teaspoon pepper
2
teaspoons vegetable oil
3
cloves garlic, cut in half

Chipotle Salsa

1
can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1/2
cup Mexican beer
2
chipotle chiles in adobo sauce

Caramelized Onions

1
teaspoon vegetable oil
3
cups sliced onions

Taco Shells and Toppings

Old El Paso™ Stand 'n Stuff™ taco shells
1
cup crumbled queso fresco cheese
1
medium avocado, pitted, peeled and sliced

Directions

  • 1 Spray 5- to 6-quart slow cooker with cooking spray. Sprinkle beef with salt and pepper. Heat 12-inch nonstick skillet over high heat; add 2 teaspoons oil. Cook beef about 3 minutes on each side. Place beef in slow cooker; add garlic. In blender, place salsa ingredients. Cover; blend until smooth. Pour half of salsa into slow cooker. Cover; cook on High heat setting 4 hours to 4 hours 30 minutes. In same skillet, heat 1 teaspoon oil over high heat. Stir in onions. Reduce heat to medium-low; cook about 15 minutes, stirring frequently, until onions are caramelized. Remove from skillet to bowl. Cover; refrigerate.
  • 2 Remove beef from slow cooker to plate; shred with 2 forks. Reheat caramelized onions. Spoon beef into taco shells, heated as directed on box; top with onions, salsa, cheese and avocado.
