Next party, let guests scoop creamy single-serving southwest chicken nachos direct from the slow cooker. Black beans and peppers add flavor and color.

Made this for the first time for a potluck at work. I received rave reviews! It is definitely a keeper. I doubled the recipe but only added a total of 1 red and 1 green bell pepper, then used half of a jalepeno dip and half ranch dip and just whatever seasoned frozen and then thawed chicken strips I could find (used 22oz in the doubled recipe) - heated on low for an hour and a half, stirred, then at 3 hours, added the peppers and dips, turned on high for 30 min, then turned to warm when ready. Absolutely awesome!

I made this with 2% plain Velveeta and added a can of rotel to it instead of using the jalapeno Velvetta to lessen the calories. Very yummy!!!

We doubled the recipe and used 1 each of red, orange, yellow, and green peppers. We also added extra chicken. The flavor and color were great and it worked well for our gathering.

This is wonderful! Warm, hearty, and flavorful, it's a much-welcome departure from plain Velveeta and Ro-tel dips.

This was excellent. I couldn't find the Southwest Ranch Sour Cream Dip; so, I used 1/3 cup ranch dip and 2/3 cup jalapeno sour cream dip. I also added about 1/2 cup regular sour cream, too. I was asked by several people for the recipe. Really, really delicious!

This was a yummy recipe, but I had to improvise a lot of the ingredients becuase to me the recipe isn't very clear. Who makes southwest ranch sour cream dip or southwest seasoned chicken breast strips? I wasn't sure what either of those ingredients were so I used regular ranch dip and I boiled 2 chicken breasts, shredded them and added them to the mix. Also, my family is not crazy about black beans so I also substituted pinto beans for them. Otherwise I follwed the rest of the recipe and it was soooo yummy! We all loved it, but it did have major modifications!
