Slow Cooker Saucy Orange-Barbecued Chicken

Ingredients

tablespoon vegetable oil

packages (1.5 lb each) bone-in chicken thighs, skin removed

Sauce

3/4
cup chili sauce
1/3
cup orange marmalade
1
tablespoon packed brown sugar
1
tablespoon Dijon mustard
1
tablespoon red wine vinegar
1
teaspoon Worcestershire sauce

  • 1 Spray 4-quart slow cooker with cooking spray. In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 8 to 10 minutes, turning occasionally, until brown on both sides (cook a few pieces at a time if all don’t fit in skillet).
  • 2 Place chicken in slow cooker. Cover; cook on Low heat setting 6 to 7 hours or until chicken is tender. About 30 minutes before serving, in 1-quart saucepan, heat sauce ingredients over medium heat 10 to 15 minutes, stirring occasionally, until thickened.
  • 3 Drain excess liquid from slow cooker. Pour sauce over chicken; cook 10 to 15 minutes longer.

Kid approved, so I gave it the five spoons. Anytime the kids gobble it down, you know it's good. I left the skin on, and there was plenty of juices from the chicken to keep this moist. I did not heat up the sauce first. I simply mixed it all together and put it in with the chicken on low for an hour. The sauce was excellent and tasted great over rice and peas. My biggest suggestion is that you double the sauce mix. There wasn't a lot of sauce left over. Basically you would need an entire bottle of chili sauce and one small bottle of orange marmalade. I plan to try the sauce with other recipes also.

Looking at this recipe I am leary of it. It is been my experience that if there is not enough liquid in the slow cooker than it will be dry and most likely burn, especially after 7 hours. I could be wrong but shouldn't there be some liquid in the slow cooker?
