For those of you think that chicken thighs are higher in fat, think again! If you use the boneless and skinless kind and trim any other visible fat from them, they are really about the same fat-wise, ounce for ounce. Dark meat always gives better flavor for saucy dishes that have stronger sauces. If you don't like the texture, by all means, use breasts. Otherwise, don't blame your choice on the fat content, since there's not enough difference to quibble over it! I like to use the black bean salsa, and it is good with yellow rice.

This recipe is so easy and so delicious. I took other reviewers advice and used a whole jar of salsa and seasoned chicken with lower sodium taco seasoning instead of just salt. I served this with Zatarain's yellow rice and a salad. I will definitely be making this dish over and over again. Thank you!

I love this recipe. I have also made it with chicken breasts on high for three hours. The last 10 minutes I sprinkle with one cup of shredded Mexican cheese.

I thought this recipe was GREAT! I used 2 1/2 pounds of chicken breasts, but followed everything else exactly. I cooked just over 7 hours, and it all turned out great. This is such an easy recipe! And I love that it uses all things that I usually have in my pantry anyway!

Fantastic! I used at least 1 cup of salsa, added brown rice to the crockpot and some extra water. The rice absorbs the flavor and it was incredible! What leftovers? I left out the cilantro. I agree that it needs some salt. Yummy with sour cream on the top. My son loves to add black olives as well. Picky daughter approved!

Hello! I am new to Bettys website and wanted to try something new because I get tired of making the same things over and over again for dinner. I tried this salsa chicken and modified it as suggested. I used chicken breast with the skin/bone in and just pulled the skin off. Browned them with olive oil with the taco seasoning on the chicken. Put them in the crock-pot added the salsa with a little more water as also mention but then I added Knorr minicubes Chipotle seasoning to the water for more spice and my family loved it! Tons of flavor. I had to only cook it for 6 hours instead of the 7hrs listed. Thanks for all the reviews everybody makes, it sure helps a lot!

Sorry, but this recipe didn't work for me. By the time I came home from work, it was burned. There wasn't enough liquid. I would suggest adding some chicken stock or water, or don't cook it for 7 hours. That obviously was way too long with little liquid.

I tried out this recipe today. I did take the suggestion of adding taco seasoning to it. Besides that I added 1 1/2 cups of salsa about 1/4 cup of water, I used five skinless thighs instead of eight, and I ran out of black beans so I used red kidney beans instead. The chicken came out delicious! I shredded it and put it into tacos. My husband loved it. The only thing that was a little lacking was on the salt department, but that was easily remedied. I will definitely make it again!

I use 1 jar of salsa and 1 can of no salt added chopped tomatoes. I use 2 cans of beans and use and empty bean can full of frozen corn. I use 4-6 skinless chicken breasts because they are lower in fat. I serve this over whole wheat pasta with shredded no fat/low fat cheddar cheese, no fat/low fat sour cream, and jalapenos. This recipe freezes great. I also freeze pasta and cheese. When I want a quick meal it's ready to heat up.
