Sandwiches were VERY tasty. Loved by the whole family and very easy to make. I used a 4 pound Corned Beef and cut off all visible fat before puttin it in the crock. I used light rye bread and reduced fat swiss. Because they are not fried/grilled I think it is a very healthy alternative to classic Reubens.

Made this for early St. Patty's Day dinner, everyone loved it. Would definitely recommend a larger cut of corned beef -- say at least 4 lbs. The one I bought was 3.11 lbs and it made six sandwiches with left-over sauerkraut, but no corned beef. One thing you can't do is over cook corned beef so I added some extra water and cooked it for about 15.5 hours total on LOW. Will make it again for fall, it's yummy!

This is a great recipe!!!! My family LOVED this and have requested it several times since and I only made it 3 weeks ago. It is so simple to make...smells up the house with the Sauerkraut, but now that the weather is cooler I'll just open the windows...That WILL NOT prevent me from making this tasty sandwich. Some of the family used hot mustard instead of Thousand Island..it was great. I served with German potato salad..my father who lives with me is German and he said this was EXCELLENT..the entire meal!!! WOW! I absolutely love this recipe. It's different and seems like you spent all day cooking when actually you spent about 5 minutes or less putting it in the crockpot/slow cooker. German Potato salad takes a while but is a great companion for this tasty dish. Enjoy...I know we did!

Made these last year and with the left over sauerkraut went well with pork chops and mashed potatoes I made the next night. It's ahhh so good!!

It smelled very good throughout the day, but when it came time to eat it, I was not impressed. The meat tasted good but there was to much sauerkraut. It is not a recipe I would consider again.

I served Reuben Sandwiches buffet (do-it-yourself) style for lunch today with the Pumpernickle and Rye Rolls as suggested. Having the Thousand Island Dressing in squeeze bottles made it easier for my guests too. My lunch was a major success, and I''ll do it again next St. Patrick''s Day too!

This is an easy and very tasty recipe. I have not used as much saurkraut as the recipe calls for as that is way too much kraut. It was wonderful to smell it cooking all day long!
