Slow Cooker Pulled Pork

Ingredients

tablespoon kosher (coarse) salt
1
tablespoon paprika
1
teaspoon garlic powder
1
teaspoon packed brown sugar
1
pork loin roast (2 1/2 to 3 lb)
1
cup water
1
cup barbecue sauce

  • 1 In small bowl, stir together salt, paprika, garlic powder and brown sugar.
  • 2 Spray 4- to 6-quart slow cooker with cooking spray. Rinse pork roast under cool water. Rub salt mixture on pork to cover completely. Place pork in slow cooker. Add water to side of pork.
  • 3 Cover; cook on High heat setting 5 to 6 hours.
  • 4 In slow cooker, use 2 forks to shred pork. Stir in barbecue sauce until well mixed.

For a spicier pulled pork, stir 1 teaspoon finely chopped chipotle chiles into the barbecue sauce before mixing with the pork.

The spice rub can be made in advance and stored in an airtight container.

This recipe is good. I will make this again but will probably use less water so the sauce is thicker.

Made this a couple of times and it is really great. I love that we can just buy the bbq sauce and mix it in. My husband is from texas and is hard to please when it comes to bbq... but he said he liked this one! We used Bull's Eye texas style bbq sauce. I did only use about 1/2 the water that the recipe calls for.... i didn't want the sauce to be too runny

This came out excellent! I used a 2.5lb pork roast, and followed the recipe without modification. I cooked it for 6 hours, and let it sit on "Keep Warm" for an additional 2 hours. The taste was perfect, and I had plenty for at least 6 people.
