Slow Cooker Pulled Pork with Root Beer Sauce

boneless pork loin roast (3 lb)

medium onion, chopped (1/2 cup)

cans (12 oz each) root beer (3 cups)

bottle (12 oz) chili sauce

teaspoon salt

  • 1 In 10-inch skillet, heat oil over high heat. Cook pork roast in oil 6 to 10 minutes or until brown on all sides.
  • 2 In 3- to 4-quart slow cooker, place pork roast, 2 teaspoon salt, the pepper, onion and 1 cup of the root beer. Cover; cook on Low heat setting 7 to 8 hours.
  • 3 About 30 minutes before serving, in 4-quart saucepan or Dutch oven, heat remaining 2 cups root beer, the chili sauce and 1/2 teaspoon salt to boiling over medium-high heat. Reduce heat to medium. Cook 8 to 10 minutes, stirring occasionally, until mixture is glossy and reduced to 2 1/2 to 3 cups.
  • 4 Remove pork from slow cooker, discarding cooking liquid. Shred pork, using 2 forks to pull pork apart. Stir in chili sauce mixture. To serve, spoon about 1/2 cup pork mixture in each bun.

For my 6th Birthday party I made this. It was raved about and was the first thing to go, Before the jambalya. It went great with the Dirty rice and salads also. I will make this again. I would double the sauce part of the recipe for 3 lbs or more of pork so it is juicy. Great recipe and easy. Thanks Denise

Since I had never made pulled pork I followed the recipe exactly. The pork was fantastic - very juicy and tender and delicious without the sauce (I had to try a piece while shredding it). We found the root beer sauce to be too sweet even for my 4 and 7 year old. Next time I make a pulled pork I'll try a BBQ sauce recipe instead.
