Slow Cooker Pork Chops with Apple-Cherry Stuffing

Lots of flavorful stuff in this easy recipe-sweet dried cherries, tart apples and savory onions.

Ingredients

package (6 ounces) herb stuffing mix
2
medium celery stalks, chopped (1 cup)
1
medium tart cooking apple, peeled and chopped (1 cup)
1
medium onion, chopped (1/2 cup)
1
cup dried cherries
1/4
cup butter or margarine, melted
1
cup Progresso® chicken broth (from 32-ounce carton)
6
pork boneless loin chops, about 1/2 inch thick

Directions

  • 1 Spray inside of 4- to 5-quart slow cooker with cooking spray.
  • 2 Mix all ingredients except pork. Place half of the stuffing mixture in slow cooker; top with pork. Spoon remaining stuffing mixture over pork.
  • 3 Cover and cook on low heat setting 6 to 8 hours or until pork is tender.

    Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer’s directions for layering ingredients and choosing a temperature.

This dinner came out awesome. My husband & I loved it we are adding this to our favorite recipe. I had read the reviews, some saying that the pork was dry. So I opted to use a thicker pork chop on the bone & added more stuffing & doubled the broth. The meat fell off the bone & was not dry at all.

I made this and my husband thought it was very good. As some have said, it cooked faster than the time stated. I did double up on the stuffing as my husband LOVES stuffing. I used a 5 quart cooker and the stuffing had a nice crisp on the bottom, which I love and soft and moist in the middle. The pork chops were fork tender. Will definitely make this again. We have a winner!
