Slow Cooker Pork Chop Supper

Got 15 minutes? Start a slow-cooked supper of pork chops or pork loin and red potatoes in a creamy mushroom sauce. Green Giant sliced mushrooms and frozen sweet peas help speed things along.

pork loin or rib chops, 1/2 inch thick

medium red potatoes (about 1 1/2 lb), cut into eighths
1
can (10 3/4 oz) condensed cream of mushroom soup
1
jar (4.5 oz) Green Giant® sliced mushrooms, drained
2
tablespoons dry white wine or chicken broth
1/4
teaspoon dried thyme leaves
1/2
teaspoon garlic powder
1/2
teaspoon Worcestershire sauce
3
tablespoons Gold Medal® all-purpose flour
1
tablespoon diced pimientos (from 2-oz jar)
2
cups Green Giant® frozen sweet peas, rinsed, drained

Directions

  • 1 Heat 12-inch nonstick skillet over medium-high heat. Cook pork chops in skillet 2 to 4 minutes, turning once, until brown.
  • 2 Spray 4- to 5-quart slow cooker with cooking spray. Place potatoes in cooker. In medium bowl, mix soup, mushrooms, wine, thyme, garlic powder, Worcestershire sauce and flour. Spoon half of the soup mixture over potatoes. Place pork on potatoes; cover with remaining soup mixture.
  • 3 Cover; cook on Low heat setting 6 to 7 hours.
  • 4 Remove pork from cooker; keep warm. Stir pimientos and peas into cooker. Cover; cook on Low heat setting about 15 minutes longer or until peas are tender. Serve with pork.

Virtually any cream soup will work in this recipe. Experiment with golden cream of mushroom, cream of chicken or cream of celery.

Apple juice works as a substitute for the white wine.

Over all, this recipe was Ok. There needed to be some more of SOME kind of spice. The potatoes do turn out great. I added wine as well, but I think next time I'd use a tbs of sherry.

I did not care for the thyme. My chops were thinner than 1/2 inch and turned out kinda mushy. I don't care for pimientos so I did not add them. I added 1/2 can of water and no flour to the soup mixture. The gravy turned out perfect. The potatoes were yummy. Next time I would omit the peas and add onions and maybe carrots. I used the wine which gave it a nice rich flavor. I think I would also use minced garlic instead of garlic salt. The meal itself was a little bland.

I've been making a virtually identical version of this recipe for years except it's not cooked in a slow cooker. It's delicious. Never had a complaint.
