Slow Cooker Meatball Stone Soup

Ingredients

bag (16 oz) frozen cooked Italian-style meatballs
1
carton (32 oz) Progresso® beef flavored broth
2
cans (14.5 oz each) diced tomatoes with Italian herbs, undrained
1
medium potato, chopped (1 cup)
1
medium onion, chopped (1/2 cup)
1/4
teaspoon garlic-pepper blend
1
bag (1 lb) frozen mixed vegetables

  • 1 In 3 1/2- to 4-quart slow cooker, mix frozen meatballs, broth, tomatoes, potato, onion and garlic-pepper blend.
  • 2 Cover; cook on Low heat setting 9 to 11 hours or until vegetables are tender.
  • 3 Stir in frozen mixed vegetables. Cover; cook on High heat setting 1 hour.

Fixed this recipe tonight. After reading the reviews, I added at the last step called for in the recipe, a 10 oz. container of Philadelphia Cooking creme Italian Herb. Turned out great. Will fix this again.

I tried this and it was good , I added beans and cayenne pepper after I split the pot into two serving dishes. The hot version was for my husband and I and it was great. The kids loved there soup they thought the meatballs inside the soup was cool.

Although I liked the concept of this recipe, it totally lacks flavor as-is. If you're going to prepare this, definitely add your own flare to it because it's going to need it. I will make it again but I'm most certainly going to spice it up and add a few extras.
