Slow Cooker Maple-Sage Pork Roast

Ingredients

2- to 3-lb boneless pork shoulder roast
2
tablespoons real maple syrup or maple-flavored syrup
1
clove garlic, finely chopped
2
teaspoons dried sage leaves
1/2
teaspoon beef bouillon granules
1/2
cup water
2
cups 1 1/2-inch cubes peeled butternut squash
2
cups baby-cut carrots, cut in half lengthwise
2
small onions, cut into wedges
3
tablespoons cornstarch
1/2
cup water

  • 1 Spray 4- to 5-quart slow cooker with cooking spray. If pork roast comes in netting or is tied, remove netting or strings. Place pork in cooker. In small bowl, mix syrup, garlic, sage, bouillon granules and 1/2 cup water; spoon over pork. Arrange squash, carrots and onions around pork.
  • 2 Cover; cook on Low heat setting 8 to 9 hours.
  • 3 Remove pork and vegetables from cooker; cover to keep warm. If desired, skim fat from juices in cooker. Pour juices into 4-cup microwavable measuring cup. In small bowl, mix cornstarch and 1/2 cup water until smooth; stir into juices in cup. Microwave uncovered on High 2 to 3 minutes, stirring every minute, until mixture thickens. Serve with pork and vegetables.

Toss together a packaged salad mix and heat whole wheat rolls to serve with the meat and vegetables.

Whole carrots, quartered lengthwise and cut into 2-inch sections, can be substituted for the baby carrots.

This was flavorful and delicious! My finicky son even asked for seconds! My only change to the recipe was instead of beef bullion I used knorr beef stock concentrate. I did as others advised and added another 2 TBSP of syrup to the sauce. I cooked on low for 10 hours using a 3.5 lb pork bone-in butt roast. I added all ingredients to the crock pot the night before - I had it in the fridge and started it the next morning before work. I will make this again!

Loved this. Will certainly be making again. Might add a little more maple as I doubled the liquids (bigger slow cooker) the carrots picked up a lot of the maple flavor but I would have liked some in the meat. It's good though! Awesome and easy!

I didn't have sage leaves so I used 1 tsp of rubbed sage seasoning plus about a tsp of Thyme and 1/2 tsp of Poultry seasoning. I didn't use the squash either as my partner and I aren't big fans. Nonetheless it was delicious and so easy to make. We couldn't believe how flavorful the roast was especially when you consider how easy it was to make. My only complaint is that I didn't make mash potatoes with it. The juices make a great gravy. Definitely a recipe I'll be making again and again. Definitely a recipe I will be making again and again.
