This was a hit at my office. I used turkey sasuage, 1% milk and healthy choice cream of mushroom soup. I also added ground mustard because I always use that when I make an egg dish. It was so good! The soup adds great flavor and keeps it moist as it is in the slow cooker making it great to serve at a pot luck or for brunch.

Disappointed with this recipe. I made it the night before, then tried to heat it up in the morning. I warmed it on low for 1+ hours and the cheese was not melted, the mixture only Luke-warm. So I set it on high for 1/2 hour, still no significant progress, time for the microwave! Overall, a pointless use of the slow cooker!

This for DreaSparky you add the soup at the end of step2 I did change a few thing I used lean ground beef, diced onions, fresh spinach instead of the bell peppers. them I layer I stared with the meat mixed then egg mixed and repeat in a 9x13 casserole dish spray with cooking oil them top it with graded parm. cheese put in oven until warm

I made this for breakfast one morning... It tasted REALLY good, BUT like it was mentioned in other posts... I didn't use the crock pot. Seemed kinda silly to for an hour. I put it in a dish and baked it for about 45 min.

I thought the description was misleading saying "early-day dining is a breeze with do-ahead scrambled eggs". I thought I was going to find a recipe that I assembled the night before and it cooked while I was sleeping. The only time I would use the slow cooker on this one would be for something like easter or Christmas while I waited for guests to arrive. Otherwise I agree with karensaurer and hannasgirl: just make it all in one skillet.

I agree with karensaurer on this one. You might as well just put in a baking dish and throw the cheese on it and pop in the oven for 5 or 10 minutes till the cheese melts or you could mix it all in the same pan top with cheese and the heat from the eggs will melt the cheese. Why would you want to dirty the crockpot to fix this.

Normally I would, too, would avoid slow-cooker recipes that require pre-cooking, but recipes like this one allow us to get our preparations out of the way ahead of time AND be flexible about when to serve the meal. This can be extremely helpful when feeding guests, or when family members have unpredictable schedules.
