My family and I really enjoy this recipe. I see other comments are stating that its too mushy. I think this dish has to be treated the same as something like lasagna. Always tastes better the day after or completely cooled. Holds it form better and can taste the the layers.

Not that great. As others said it was pretty bland. I cooked mine the least amount of time and it was completely mush. No texture, no semblance of the layers.

Great recipe! Well maybe a little bland,no problem.I added 1 can Rotel,1 can cream of chicken,1 can sweet corn(drained),half can cream of mushroom soup(instead of full can),extra tortillas,and triple the recipe.GrandKid Love It! (10).

My family really enjoyed this meal. I noticed many other reviewers mentioned it being a little mushy, so to avoid this I just added a few extra tortillas and cooked it for only about 3 hours. To add a little more spice I put taco seasoning in the beef and used light cheddar cheese soup instead. Quick and easy meal!

We thought this was bland and needed more spice. I considered adding taco seasoning to the meat but then decided to follow the recipe as written. I also wasn't crazy about the taste of the cream of mushroom soup in this dish. It turned out kind of soggy yet the outside was hard. I cooked it for 5 hours. I think that was too long. I'm going to look for a different slow cooker enchilada recipe. If I don't find anything worth trying, I may try this one again with some changes.

I substituted Cream of Jalapeno Soup, available at HEB stores in South Texas, for the mushroom soup. Mixture was a little "soupy", but absolutely delicious! I will definitely make this one again.

This recipe really had some AMAZING flavor. I love diced green chilies and the small can of them in this dish still stands out. The only bad thing about this recipe for me was that it came out mushier then I expected. The flavor was so great I will be trying this again, maybe it wont be so mushy!

I made this tonight with high hopes. It's just kind of one-note -- not a lot of flavor (and that was with me adding Chipotle Tabasco!) and it was very mushy. Glad this was only for me and I wasn't serving it to anyone else. Don't think I'll make this again.
