Made this the other night and it was delicious! Next time, I will add some creole or cajun seasoning though. Also, after I added the shrimp, they were ready after about 45 minutes, maybe a little before. I will most definitely be making this again! YUM!

People in and near New Orleans make a "red"jambalaya by adding tomatoes, true cajun people do not and their jambalaya is more brown. The trinity of onion, bell pepper, and celery is A Must for it to be jambalaya. The rice is browned much as it is in fried rice, spanish rice, or a paella dish. I grew up eating jambalaya all of my life. I have never known rice to be "optional" nor have I ever known anyone use polish sausage. Jambalaya is not a soup. When you make those types of substitutions; you have a sausage, shrimp, and rice dish- tasty perhaps but not jambalaya.

I love this recipe. I'm kind of disappointed in people rating it 1 spoon without ever making it just because they don't like what it is classified as. Anyways, I change it up just a little bit. I throw in a whole head of garlic and as much hot sauce as I can stand. No measurements. Just taste. I buy cooked shrimp and put them in just long enough to get warm. I use andouille sausage. Very good!

Great recipe! I doubled the tomatoes because I like my food saucy! I also got home really late from work and the kids were starving, so I threw in already cooked shrimp and it only took a few minutes to heat up. Will definitely make again. Going to try adding some chicken next time.

My family loves this recipe I have now made it twice just how the receipe says to make it. THe only thing I did different was to use skinless sausage.

I followed some of the recommendations from the previous reviews.. doubled all the vegetables and omitted the seasoning substituting cajun seasoning with hot sauce. I cooked the sausage before hand and deglazed pan with a bit of white wine to get use of all of the drippings. The sausage was added when the shrimp were, which I doubled as well. With these modifications I found the dish great!

Delicious and easy! For those who do not eat meat, using a vegetarian smoked sausage an hour or so before done worked out well for me. I think using more shrimp and no sausage would be good too. I did add more of each vegetable (used a little bit of fresh sweet red pepper too) as someone had suggested. I will definitely make this again. Using the hint about using a molded mound of rice in the center of the bowl and adding the jambalaya around it was a wonderful way to present and serve. This would make a great company dish, but it's easy enough for great everyday meals too.
