I was not intending on changing this recipe at all, but forgot to put it into my slow cooker before going to work. When I got home from work I decided to throw everything together into a big pot and put it on medium high for about an hour. While it was boiling I decided to add some pasta to it, cause my family loves pasta. Anyhow, this was so delicious and so simple. I did Italian seasoning to it, just for my preference. So, if you forget to put it into the slow cooker like I did, don't fret, just put it in a pot on the stove :)

My picky family LOVED this meal. Several reviewers commented on the cooking time being too long, so I just threw the meatballs in the crock still frozen and found 8 hrs on low/2 hrs on warm (how long I was gone for the day) to be perfect cooking time, no need to thaw them. I did't have any cannellini beans on hand, so I just used one can of kidney beans and a can of garbanzo beans, and I used two cans of tomatoes just because. It still turned out perfectly! I ate mine as a soup, but threw in some cooked rotini noodles to make it a little easer for the kids to eat. A new family fave!

My boyfriend and I had this tonight for dinner. I just wanna say with a side salad this meal was lovely. I added some fresh parsley and some fresh chives to the crock pot and the end result was flavorful. I must add that 8 Hr was a bit over kill I stopped cooking mine at 6 hours and the meatballs were not mushy at all but really just perfect.

So easy and so delicious! I used no-salt tomatoes and low sodium broth. However, I felt the cook time of 8-10 hours was too long. Mine cooked just over eight, and my meatballs were falling apart. Next time I will start checking the meatballs at about 6-7 hours. I'd like them cooked but still firm. This is definitely a recipe that is going into my "regulars"!!!!

Beyond simple. I did add spinach right before serving. Was trying to think what else I could add. The soup was delicious though!
