Ingredients

(4 to 5-lb.) beef rump roast

(1-oz.) pkg. dry onion soup mix

teaspoons sugar
1
teaspoon dried oregano leaves
2
(10 1/2-oz.) cans condensed beef broth
1
(12-oz.) can beer or nonalcoholic beer
2
garlic cloves, minced
16
onion buns, split

Directions

  • 1 Place beef roast in 3 1/2 to 4-quart slow cooker. In medium bowl, combine all remaining ingredients except buns; mix well. Pour over roast.
  • 2 Cover; cook on low setting for 8 to 10 hours.
  • 3 Remove beef from slow cooker; place on cutting board or large plate. Slice beef with knife or shred with 2 forks; place in buns. If desired, skim fat from juices in slow cooker. Serve sandwiches with individual portions of juices for dipping.

I used this recipe a few weeks ago for a Friday night dinner. It was devoured in no time. Everyone who walked in the door after work had one sandwich and was asking if it was okay to have another. I have a slightly large slow cooker so I had the extra meat. I used banana peppers and swiss cheese along with some sauteed onions and mushrooms to top them off. The sides were simple as in the picture, pickles and potato chips, for some crunch on the side.

This is my favorite way to do a beef stew, as well...you can't beat a slo-cooker for any type of meat!

My family loves this recipe. Great to make for an easy way to feed the "clan". I have never had a problem with dry beef - but I also use mushrooms and juice from the can in place of the beer. The beef just falls apart perfectly. We do buy our beef in bulk directly from the meat packing plant so it is fresher than what you might get at the grocery store.
