Slow-Cooker Honey Barbecue Pork Roast with Carrots

Honey glazed carrots and a sweet-tangy barbecue sauce add a delicious flavor to this hearty slow cooked pork roast dinner.

Ingredients

boneless pork loin or sirloin roast (1 1/2 lb), trimmed of fat

cup barbecue sauce

tablespoons honey

tablespoon balsamic vinegar

tablespoon soy sauce

teaspoon ground ginger
1/4
teaspoon pepper

boxes (10 oz each) Green Giant™ frozen honey glazed carrots, thawed

  • 1 Spray 3 1/2- to 4-quart slow cooker with cooking spray. Place pork in slow cooker. In small bowl, mix remaining ingredients except carrots; pour over pork.
  • 2 Cover; cook on Low heat setting 6 to 7 hours.
  • 3 Place carrots around pork. Increase heat setting to High. Cover; cook about 30 minutes longer or until carrots are crisp-tender.
  • 4 Remove pork from slow cooker to cutting board; cut into slices. Place pork on serving platter; top with sauce and carrots.

Expert Tips

For an extra punch of flavor, stir in 1 tablespoon of balsamic vinegar into the finished sauce.

Thinly slice 1 medium onion and place in slow cooker. Place pork on onion and cook as directed.

Substitute 1 1/2 lb thick-cut pork chops for the pork roast.
