This soup is wonderful for leftover ham from the holidays! My family doesn't particularly like soup, but this was really hearty and delicious. I didn't julienne the carrots and didn't add the almonds or the dry sherry, but it was so easy to put everything in the crockpot in 5 or 10 minutes and my son and his friend kept saying how good it smelled. Yummy!

Perfect cool weather meal. I also doctored a bit, deli ham, and cooked on top of stove. Anyone with a busy family schedule couldn't go wrong with this in the crock pot ready to eat when they get home. A salad and rolls and voila, satisfying healthy meal!

A keeper recipe. I am known for" doctoring "up a recipe with my own additions. The only thing I did different was make it on the stove top. I sauted honey baked ham bought at the deli in one piece and julienned, celery, onion and carrots until the celery was semi-tender. Added the rest of the ingredients and cooked on simmer til rice was tender. GREAT!

Absolutely wonderful and great for a cold day, served with corn bread or biscuits, it’s definitely a keeper. And when I say a cold day, since I live in south Florida, a cold day is any day under 75 degrees! And if you are like my sister and don’t like to do dairy, use a little Almond Soy Milk that should do the trick. Happy cooking!
