Thanks for the info. Maybe this would be better made with butternut squash or kabocha squash.

I hate to say it, but this recipe was a big disappointment. I took some suggestions by earlier reviewers to heart, reducing both the amount of onions and the amount of ginger. While I think the flavors were balanced, my husband and I were not enthusiastic about the taste. He in fact refused to eat anything beyond the first bite, and, while I did eat a bowl of the soup, I decided that it just wasn't good enough to keep the rest.

I enjoy many of the recipes on this website, however this was NOT one of them. There was a strong onion taste and the ginger was very strong as well. My husband and I took one spoonful and then threw out the entire pot of soup. Not something I would recommend to a friend.

Let me start by saying I've loved many of the Betty Crocker recipes I've tried on this website. I'm thankful to this website for helping me easily experiment with new things. That being said, this soup was pretty awful. We're pretty sure it was because of too much ginger in the recipe. Maybe it was supposed to be 2 tsp instead of 2 tbsp?? My mother-in-law tried to help me fix it by adding about 1 cup each of sour cream and unsweetened applesauce, plus a little cinnamon and nutmeg. After those changes, 3 out of 4 of us enjoyed it--yet we all agreed the ginger was still mighty potent. My advice: if you LOVE ginger, enjoy as is. If not, start with only a tsp or 2 of ginger and add more a little bit at a time after all your other ingredients have been mixed.
