Slow-Cooker French Pork and Bean Casserole

Ingredients

  • 2 slices bacon, chopped
  • 1 lb boneless country-style pork ribs, cut into 3/4-inch pieces
  • 1/2 cup finely chopped onion
  • 1 cup shredded carrots
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon pepper
  • 2 cans (15 to 16 oz each) great northern beans, drained
  • 1/2 lb cooked kielbasa, cut into 1/2-inch pieces

    In 10-inch skillet, cook bacon, pork pieces and onion over medium-high heat 8 to 10 minutes, stirring occasionally, until pork begins to brown.

    Spray 3 1/2- to 4-quart slow cooker with cooking spray. In cooker, place pork mixture. Stir in remaining ingredients except beans and kielbasa. Layer beans over top.

    Cover; cook on Low heat setting 6 to 7 hours.

    Stir in kielbasa. Increase heat setting to High. Cover; cook 30 minutes longer or until thoroughly heated.

  • The flavor of this French-inspired casserole is improved by quickly browning the pork with the bacon and onion.
  • Kielbasa is a Polish pork sausage.
