Slow Cooker Easy Slow Cooker Pot-Roasted Steak

Borrowing classic goulash ingredients like paprika and onions (here from prepared soup mix) gives this slow-cooked stew exceptional flavor.

Ingredients

lb boneless beef top round steak (1 inch thick)
1/2
teaspoon paprika
1/4
teaspoon pepper
1
cup julienne cut (2x1/8x1/8 inch) carrots
1
jar (4.5 oz) Green Giant® sliced mushrooms, undrained
1
can (10 3/4 oz) condensed cream of mushroom soup
2
tablespoons dry onion soup mix (from 1-oz package)

  • 1 Spray 3- to 3 1/2-quart slow cooker with cooking spray. Sprinkle beef with paprika and pepper; cut into 4 serving pieces. Place in slow cooker.
  • 2 In medium bowl, mix carrots, mushrooms, soup and soup mix; pour over beef.
  • 3 Cover; cook on Low heat setting 5 to 6 hours.
  • 4 Serve steak topped with gravy and vegetables.

I added frozen green beans and served it over rice. The basic flavors were a good blend; however, the salt from both the instant onion soup mix and mushroom soup was overwhelming. I might try this again with low sodium mushroom soup.

Cream soup as an ingredient? Honestly? That's so 1940's! Yes, folks want convenience, but we're looking for HEALTHY recipes, low sodium, lots of flavor. I'd much prefer using canned evaporated milk plus canned mushrooms and some fresh or dried herbs. Only 30 seconds more work, and better control of the chemical preservitives and sodium going into my family!
