When there's just two cowboys, here's just what you want to rope in for a meal.
ounces beef stew meat
potato, unpeeled, cut into 1-inch pieces
cup chopped onion
can (16 ounces) baked beans in barbecue sauce
In 2 1/2- to 3 1/2-quart slow cooker, mix beef, potato, onion, salt and pepper. Spread beans over beef mixture.
Cover and cook on low heat setting 8 to 10 hours or until beef is tender.
If you have difficulty purchasing meat in small quantities, buy the larger amount and divide and freeze for later.
