Slow Cooker Country Chive and Ranch Smashed Potatoes

Ingredients

pounds small red potatoes
1/3
cup water
1
container (8 ounces) sour cream-and-chive potato topper
2
tablespoons ranch dressing and seasoning mix (from 1-ounce envelope)
1/4
cup chopped fresh chives
1/3
cup half-and-half

  • 1 Cut potatoes into halves or fourths as needed to make similar-size pieces. Place in 5- to 6-quart slow cooker. Add water; mix well to coat all pieces.
  • 2 Cover and cook on Low heat setting 5 to 6 hours.
  • 3 Gently mash potatoes with fork or potato masher. Stir in potato topper, dressing mix (dry) and chives. Stir in half-and-half until potatoes are soft consistency. Potatoes will hold on Low heat setting up to 1 hour; stir occasionally.

To make 'em cheesy, fold in 1 cup shredded Cheddar cheese after stirring in the half-and-half.

Try chopped fresh parsley instead of the chives.

These go nicely with sliced ham and steamed green beans.

Can't find potato topper? Use 8 oz sour cream and 1 teaspoon dried chives. Or you like, skip the chives and just add an additional tablespoon chopped green onion for Savory Ranch Smashed Potatoes.

I doubled the recipe and substituted 1/2 cup crème fraiche for 4 oz. of the sour cream. Only needed about 5 hours in the crock pot. Didn't need to mash, chunky mashed potatoes are good too! Very tasty and will make again!
