Slow Cooker Corn, Ham and Potato Scallop

Condensed Cheddar cheese soup is the robust base for this slow cooked dinner made using potatoes, ham and Green Giant® whole kernel sweet corn.

Ingredients

cups cubed (1-inch) peeled baking potatoes
1 1/2
cups cubed cooked ham
1
can (15.25 oz) Green Giant® whole kernel sweet corn, drained
1/4
cup chopped green bell pepper
2
teaspoons instant minced onion
1
can (10 3/4 oz) condensed Cheddar cheese soup
1/2
cup milk
2
tablespoons all-purpose flour

Directions

  • 1 In 3 1/2 to 4-quart slow cooker, combine potatoes, ham, corn, bell pepper and onion; mix well.
  • 2 In small bowl, combine soup, milk and flour; beat with wire whisk until smooth. Pour soup mixture over potato mixture; stir gently to mix.
  • 3 Cover; cook on Low setting 7 to 9 hours or until potatoes are tender.

Very good and very easy. My only suggestion is to add a little bit of salt and pepper. I substituted the ham with smoked sausage, and it was great.

Excellent recipe - just throw it in the crock pot in the morning and it's ready when you get home from work. Definitely needs a larger crock pot - mine almost wasn't big enough. To speed things up, you can substitute store-bought julienned ham. I added fresh ground black pepper and, near the end, a handful of grated cheddar cheese for more body.

This recipe was really good. I have made it twice. The second time I subsituted the ham with kabasi. I used a half bag of frozen corn, instead of a can, and a cup of frozen pepper/onion stir fry (chopped some of the slices), because I didn't have a green pepper or an onion. I used a can of broccoli cheese soup, I thought that might be good. I also added a little mild cheddar shredded cheese, because it wasn't cheesey enough to my liking last time. It turned out really good, I recommend trying it both ways!
