Glad I went ahead and made this Chunky Chicken Chili. Kids that usually hate everything loved it. This recipe is definitely a keeper.

So easy to prepare and always a winner in our household. I use marinated chicken fajita thigh meat. There is NEVER anything left over!!! BTW -- someone asked if they should use hominy or posole. As far as I know -- they are one in the same (I use white, not yellow).

Such an easy recipe to throw together! I made as is except I used fire-roasted tomatoes with chilies. The hominy was a nice twist but this would be equally delicious with black beans & corn. My husband declared this recipe a "keeper"!

NICE flavor !!! Very nice ! I will make this again but maybe instead of using the hominy - i would use frozen corn. I've never had hominy before and it was like eating chick peas in my chili. LOL

I've already rated this previously, but wanted to post again to answer a question in the reviews. I disagree with the previous reviewer that says to thaw the chicken. I NEVER thaw meat before putting it in the slow cooker, which is much of the appeal of cooking that way, and I always have delicious, succulent meat at the end of the day. I guess it's personal preference, but I wanted to put it out there that you definitely to HAVE to thaw the meat, especially in this recipe. Hope this helps!

My family love this recipe. They like spicy flavor and dislike the tomatoes making this recipe sweet, so I made some changes. I use a little seasoning from the chili seasoning bag, add some regular chili powder, cumin, salt & pepper. I cooked for the 7 hrs, add the hominy and cilantro inside the pot, not as a garnish, adjust seasoning after a few minutes and was perfect!!!

I have tried this on the stove with thawed chicken and the flavor was great, but being new to using a slow cooker, do you put in the chicken frozen or thawed?
