Slow Cooker Chipotle Pulled-Pork Sandwiches

Put a spicy spin on pulled pork...stir in chili powder and chipotle chiles in adobo sauce.

I made this for a Cinco Pot Luck today...Everyone wanted the recipe. We like it spicy here in Denver. This had GREAT flavor, just enough heat. I also added 2 tsp. of cumin to the rub. 4 people asked for the recipe...I call this a keeper.

This wasn't really our cup of tea. The pulled pork itself tasted great. I think next time we'll just use the rub and throw in our own bbq sauce. Just a touch too hot but still a great idea for something different for dinner!

This is, by far, one of my FAVORITE slow cooker meals! The last time I made it I used a package of assorted pork chops instead of the roast and it was just as fabulous. I would even have just eaten it as pork chops as is after it cooked with the rub and just skipped pulling the pork and adding the sauce. I definitely think it is soooo much better with the peppers and the adobo sauce, it adds a great smoky flavor. I think it only makes 20 sandwiches if you buy small dinner rolls to use as the rolls for the sandwiches, which is perfect if you are having this as part of a buffet for a party or a pot luck dinner. We have also used this pulled pork in soft tortillas, yummy!!

this was delicious! the meat was tender and juicy, we actually didn't do the steps with the chipotle, just because that would be too spicy for my kids. But quite honestly, this didn't need it...my husband and i added our own BBQ sauce as need and in my husbands case he added extra jalapenos just for extra spiciness :-) both kids liked it too. i couldn't find a 3lb pork shoulder at my market (i got a 2.6lb) and believe me we didn't have leftovers and we're only a family of 4. i'm not sure how this recipe could make 20 sandwiches...be never-the-less i will be making this again.

Great recipe- the meat is so tender and very flavorful with the rub. I halved the recipe, using 1.5lbs of pork and it only made 5 sandwiches. I don't believe it is possible that you could get 20 sandwiches out of 3 pounds, unless they were sliders. Does have a good kick to it- can be toned down by seeding your chipotles while chopping them. We thought the meat would be great over tortilla chips for a nacho dish!
