Slow Cooker Chipotle Pork Roast

Ingredients

tablespoons chili powder

teaspoon salt

small unpeeled red potatoes, quartered
3
small sweet potatoes, peeled, quartered
1
medium onion, cut into 3/4-inch wedges (about 1/2 cup)
1
boneless pork shoulder roast (2 1/2 to 3 lb)
2
tablespoons olive or vegetable oil
1
can (8 oz) tomato sauce
1
can (14.5 oz) diced tomatoes, undrained
1
canned chipotle chile in adobo sauce, finely chopped (about 1/2 tablespoon)

tablespoons water
2
tablespoons cornstarch

  • 1 Spray 5- to 6-quart slow cooker with cooking spray. In large bowl, mix chili powder, salt, garlic powder and cumin. Add potatoes, sweet potatoes and onion to bowl; stir to coat. Place vegetables in slow cooker.
  • 2 Remove netting from pork. Rub oil over pork; roll in spices in bowl to cover. Place pork over vegetables. Pour tomato sauce, tomatoes and chopped chile over pork and vegetables.
  • 3 Cover; cook on Low heat setting 6 to 8 hours.
  • 4 Remove pork and vegetables from cooker; cover to keep warm. Pour sauce from cooker into 3-quart saucepan. In small bowl, mix water and cornstarch; stir into sauce. Cook over high heat 5 to 10 minutes, stirring frequently, until thickened. Serve sauce with pork and vegetables.

I recently retired and have taken over the cooking as my wife is still working. My past cooking has largely been to grill. Having taken over the cooling chores, this was the first slow cooker recipe that I tried and it came out great. The only thing that I would do the next time is to add more tomato sauce. With a 2.5 pork roast, there was not enough sauce remaining for left overs. Thanks to CookinKaty for suggesting to add more chili powder etc. to coat the meat. Most of all, thanks Betty

Very good dish, and made the house smell amazing! I agree with CookinKaty that there wasn't enough spice after tossing the potatoes, so I made another batch of the spice for the roast. Depending on the size of your potatoes, you might not need as many as the recipe calls for. I couldn't fit them all in the crock pot, so I just took enough potatoes out to fit it the roast.

Wow! What a recipe! Amazing flavor, not too spicy. I left mine in the slow cooker for about 8 1/2 hours and the meat just fell apart. I thought that it would taste too "tomato-y" because of all of the tomato sauce and diced tomatoes but it was perfect. After tossing the potatoes and onions in the spice mixture there wasnt enough spices left to coat the Roast itself so I added 1 tbs chili powder, 1/2 tsp garlic powder, and 1/2 tsp cumin to the large bowl after putting the veggies in the slow cooker and then rolled the roast in it and it was perfect! Definitely will make again!
