I was getting ready for work one morning, and was tossing things into the crock pot to make my favorite chili. After I tossed my chicken thighs into the slow cooker, I realized I didn't have a couple necessary ingredients. With 5 minutes before I had to walk out the door, I found this recipe. I appreciated the little prep time that went into this meal, and when I got home it smelled warm and inviting. The dish itself was fine, but a bit bland. I think next time I'll add some mushrooms and season it more. This also doesn't keep very well, since the rice absorbs so much of the cooking liquid and cream soup, so don't count on it for leftovers. I'll probably make it again in the future, but it isn't a family favorite.
