Slow Cooker Chicken-Barley Stew

Ingredients

large carrots, sliced (2 cups)

medium stalks celery, sliced (1 cup)

large onion, chopped (1 cup)

bone-in chicken breasts (about 1 1/4 lb), skin removed

cups water
2
cups Progresso® chicken broth (from 32-oz carton)
3/4
cup uncooked medium pearled barley
1/4
teaspoon pepper
1
can (14.5 oz) diced tomatoes, undrained
2
tablespoons chopped fresh parsley
1
teaspoon dried thyme leaves

  • 1 In 4- to 5-quart slow cooker, place carrots, celery and onion. Place chicken breasts on vegetables. Add remaining ingredients except parsley and thyme.
  • 2 Cover; cook on Low heat setting 8 to 9 hours.
  • 3 Remove chicken from cooker; place on cutting board. Remove meat from bones and chop into 1/2- to 1-inch pieces; discard bones.
  • 4 Stir chicken, parsley and thyme into stew. Increase heat setting to High. Cover; cook 10 to 15 minutes longer or until chicken is thoroughly heated.

Very easy to make stew and quite tasty. I used four cups of chicken broth and one cup of vegetable broth instead of plain water for a more robust flavor. The barley ended up a bit on the mushy side but that is probably because it was left in the cooker too long; busy day at work; set the cooker for eight hours then it goes to warm; it was on warm for an extra four hours. I will definitely make this again and use the recipe as a base with altering the ingredients a bit for variety.

VERY Good but I did make the following changes: - all chicken broth; although next time I will add another cup or so because there wasn't enough liquid...I know "stews" are thicker but I just prefer it more soupy - 1 cup barley - Diced tomatoes with green chilies instead of plain (we like spicy at my house) - I also cubed and cooked 3 chicken breasts in some minced garlic, ground black pepper and onion before throwing it all into the crock pot towards the end with the thyme and parsely so that the chicken wasn't dry

This came out really good! I used baby carrots and frozen peas for veggies since that's what I had. I would use half an onion next time since there was a lot of it. It was very flavorful and everyone loved it!
