I substituted non-fat sour cream and non-fat cottage cheese for the regular stuff. I also used boneless, skinless chicken breast as opposed to the thigh and wheat rotini noodles instead of egg noodles. The flavor was good, but I may have miss judged the time a little because it ended up a little dry. The leftovers made great burritos the next day; just warm them up and add a little salsa and sour cream...mmmmm.
