This soup was full of flavor! I omitted the chicken, used regular cream of mushroom, roasted two garlic cloves, and it was delicious! The only negative thing was, it came out to salty. So next time I will use one can of chicken broth, and one can of water.

There is something about the mushroom with roasted garlic soup that makes this wonderful. I also used the new Progresso Tuscan style chicken broth. I used frozen gnocchi from a local Italian deli and it was perfect. You would have thought I slaved all day making this for dinner. I'm making it again tonight for family dinner and will send some to a friend. It's really that good.

I made this as directed, cooking 4 chicken breasts cubed (2cups) . I used heart healthy cream of mushroom soup. I roasted a head of garlic in the oven, smashed the garlic and added 1 tablespoon to broth. Very mild. If you want a garlic taste add more. I put all ingredients except gnocchi and peas., on stove pot and brought up to a boil. Then added it to a preheated crock pot on high. Cooked for 2 hours to cook veggies. Then added gnocchi and peas for an additional 1/2. hour. Was perfect. I thought the thyme was great. I don't know why you would have to cook the chicken first if you cooked this on low for 6/8 hours.

My husband is a gnocchi fan who was fascinated by having them in a dish that wasn't Italian seasoned. We loved this and I'd like to say, since nobody has yet, that it freezes very well.

I used chicken breast, and basil/oregeno instead of the thyme. It turned out great! My children asked me to make it again.

This soup was awesome! Really delicious. The gnocchis make it almost like chicken and dumpling soup. I used 3 cans of Campbell's condensed chicken broth, Cream of Chicken soup, and I went light on the peas. Next time I might go lighter on the Thyme, but I'd definitely make it again. I agree that the soup was a bit salty, but I thought it might have been because I used condensed chicken broth and didn't add water.
