I wanted to dust off my slow cooker, so my husband and I tried this recipe. It was easy to shop for and prepare. Since I don't like cooked celery and he doesn't like green onion, it turned out a little bland. Another reviewer suggested adding some frozen veggies an hour before serving, and that sounds like a great idea. Since it's just the two of us, we had a lot left over for weekday lunches, but I found that the bacon was not appetizing in the leftovers. In the future, I would add the bacon to the bowls when serving, rather than to the pot. Good potato soup-y texture!
