Slow Cooker Cheesy Italian Tortellini

Two types of meat pair well with tortellini, cheese, marinara sauce and mushrooms. Buon appetito!

Ingredients

1/2
lb lean (at least 80%) ground beef
1/2
lb bulk Italian sausage
1
container (15 oz) refrigerated marinara sauce
1
cup sliced fresh mushrooms
1
can (14.5 oz) diced tomatoes with Italian herbs, undrained
1
package (9 oz) refrigerated cheese-filled tortellini
1
cup shredded mozzarella cheese or pizza cheese blend (4 oz)

  • 1 In 10-inch skillet, cook beef and sausage over medium-high heat 5 to 7 minutes, stirring occasionally, until brown; drain.
  • 2 Spray inside of 4- to 5-quart slow cooker with cooking spray. Mix beef mixture, marinara sauce, mushrooms and tomatoes in cooker.
  • 3 Cover; cook on Low heat setting 7 to 8 hours.
  • 4 Stir in tortellini; sprinkle with cheese. Cover; cook on Low heat setting about 15 minutes longer or until tortellini are tender.

Family loved this - used 1 lb of hot italian sausage rather than 1/2 and 1/2 and cooked with onion and garlic. Nice change from the usual slow cooker dinners.

Ten years ago I found this exact recipe in one of those Betty Crocker Slow Cooker cookbook/magazine you find at the store checkout, and I have made it for Christmas Eve dinner every since then. It's super easy to throw together in the morning before things get crazy; and you can't imagine how nice it is to come home from church in the evening and have this wonderful, warm bowl of awesomeness waiting for you. So comforting, with very little fuss. I make sure to get spinach tortellini because it looks so festive with the red sauce, and I've always used turkey sausage in place of what's called for. So delicious! I'd give it 10 spoons if I could.
