Slow-Cooker Caribbean Black Beans

Ingredients

  • 2 cans (15 ounces each) black beans, rinsed and drained
  • 1/2 cup water
  • 1 medium green bell pepper, chopped (1 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 jar (2 ounces) diced pimientos, drained

    Mix all ingredients in 3 1/2- to 4-quart slow cooker.

    Cover and cook on low heat setting 5 to 6 hours to blend and develop flavors.

  • You're probably most familiar with pimientos as a stuffing in green olives. Pimientos can be purchased canned or bottled. They taste sweeter and more succulent than red bell peppers.
  • This black bean dish tastes great as a meatless main dish with rice. Place a mound of hot rice in the middle of each individual shallow bowl and spoon the black bean mixture around the rice. Serve with plenty of chopped red onion and hard-cooked eggs to sprinkle on top.
