Looking for something spicy, easy and different. This filled the bill. My husband and I enjoyed this recipe. I added hot pepper flakes instead of cayenne. I will definitely make this again. I'm gong to try it with pasta too!

I have the 2002 cookbook that this is published in and I would be very upset, as would my family, if it got lost. We LOVE this recipe! I always double the recipe and there is very little left over. We like spicy food and I use red cayenne pepper instead of cajun seasoning. It gives it a nice heat without being so hot you can't taste everything else.

This may not be an authentic Cajun dish but it was really good. I made a few changes: used one slice bacon, chicken legs, extra green pepper and only 1 tsp Cajun seasoning. Cooked on the top of the stove for 2 hours. Delicious, tender and just spicy enough for us.

Living in the heart of Acadiana, where all cajun dishes originate from, I have to say that this definitely is NOT a Cajun recipe and tastes NOTHING like the food that we cook. I would suggest that Betty Crocker do their research into authentic Cajun food before posting recipes claiming to be Cajun.

My entire family loves this dish so I make it often. It's best with fresh onion and green pepper, but I have used the frozen, diced veggie blend with onions, peppers and celery in a pinch. We think the boneless thighs taste better than breast meat in this dish. Just try not to stir too much or cook it longer than the 8 hrs. The chicken breaks up into small pieces if cooked too long. It's still delicious though. I usually use the can diced tomatoes flavored with green peppers and onions. During the last hour of cooking, I occasionally add sliced Keilbasa or smoked sausage and once I added cooked shrimp. ALL delicious. I like to sprinkle a little hot sauce at the end and we always have it over white rice with corn bread muffins or french bread.

I used chicken breast and reduced the cook time to 6.5 hours on low setting. Chicken was moist. This dish was delicious!!!! Will definately make it again.

I love this recipe! I used breasts (thighs would have been better, probably), double the veggies and the seasoning, and drained the bacon. I probably lost a little flavor doing that, but I also lost some calories, and my waistline thanks me. Anyway, even the kids loved it :)
