Ingredients

  • 1 Reynolds® Slow Cooker Liner
  • 1 boneless beef chuck roast (2 to 2 1/2 lb)
  • 3 teaspoons Cajun seasoning
  • 1 box (9 oz) frozen corn, thawed
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1/8 teaspoon pepper
  • 1/2 teaspoon red pepper sauce

Steps

  • 1
Place Slow Cooker Liner inside 5- to 6 1/2-quart slow cooker, making sure liner fits snugly against bottom and side of bowl, and pulling top of liner over rim of bowl.
  • 2
Rub entire surface of beef with Cajun seasoning; place in slow cooker. Top with corn, onion and bell pepper.
  • 3
In small bowl, mix tomatoes, pepper and pepper sauce. Pour over vegetables and beef.
  • 4
Cover; cook on Low heat setting 8 to 10 hours.
  • 5
Remove beef from slow cooker to cutting board; cut into thin slices. Using slotted spoon, remove corn mixture and serve with beef.

  • Serve food directly from the lined slow cooker. Once the slow cooker cools, remove the liner and throw away for easy cleanup.
  • Maque choux (pronounced MOCK shoo) means "smothered corn" in Cajun country. This corn is smothered with tomatoes, bell peppers and onions.
