Slow Cooker Cajun Pot Roast with Maque Choux

Ingredients

Reynolds® Slow Cooker Liner
1
boneless beef chuck roast (2 to 2 1/2 lb)
3
teaspoons Cajun seasoning
1
box (9 oz) Green Giant® Simply Steam® Niblets® frozen corn, thawed
1/2
cup chopped onion
1/2
cup chopped green bell pepper
1
can (14.5 oz) Muir Glen® organic diced tomatoes, undrained
1/8
teaspoon pepper
1/2
teaspoon red pepper sauce

Directions

  • 1 Place Slow Cooker Liner inside 5- to 6 1/2-quart slow cooker, making sure liner fits snugly against bottom and side of bowl, and pulling top of liner over rim of bowl.
  • 2 Rub entire surface of beef with Cajun seasoning; place in slow cooker. Top with corn, onion and bell pepper.
  • 3 In small bowl, mix tomatoes, pepper and pepper sauce. Pour over vegetables and beef.
  • 4 Cover; cook on Low heat setting 8 to 10 hours.
  • 5 Remove beef from slow cooker to cutting board; cut into thin slices. Using slotted spoon, remove corn mixture and serve with beef.

Serve food directly from the lined slow cooker. Once the slow cooker cools, remove the liner and throw away for easy cleanup.

Maque choux (pronounced MOCK shoo) means "smothered corn" in Cajun country. This corn is smothered with tomatoes, bell peppers and onions.
