Slow Cooker Brown Lentil Soup

Ground cumin gives a slight Southwestern spin to hearty lentil soup.

Ingredients

bag (1 lb) dried brown lentils, sorted, rinsed

medium carrots, chopped (about 1 cup)
1
large onion, chopped (about 1 cup)
3
cloves garlic, finely chopped
2
cartons (32 oz each) Progresso® chicken broth (8 cups)
1
can (6 oz) tomato paste
1/2
cup dry sherry or Progresso® chicken broth
1 1/2
teaspoons ground cumin
1
teaspoon dried thyme leaves

Directions

  • 1 Spray 5- to 6-quart slow cooker with cooking spray. In cooker, mix ingredients.
  • 2 Cover; cook on Low heat setting 8 to 10 hours. Stir well before serving.

I recently made this wonderful soup for hubby & me. I have some of it in the freezer at the moment. We enjoyed it will make it again but this time around will add one more carrot and two stalks of celery. I did cook it longer & we had it the next day. The consistency of the soup was right on not too thick at all, didn't need to any any more liquids even when reheating it the next day. Great for the cold days.

Just made this soup today. Very tasty. Had to make some changes like used 6 cups of water and 2 cans of beer for liquid. Glad I did. Omitted tomato paste and used Italian spice grinders instead of the seasonings in the recipe. I also added one stalk chopped celery and one chopped peeled potato. SO good on a cold day.

I substituted a can of rotelle for the 1/2 cup wine or chicken broth and it added a great tasting touch of heat to the soup. My crock pot gets very hot, so even set on low, I did not have to cook the soup 8 hrs. My husband and I both thought it was delicious and I will definitely make it again
