I recently made this wonderful soup for hubby & me. I have some of it in the freezer at the moment. We enjoyed it will make it again but this time around will add one more carrot and two stalks of celery. I did cook it longer & we had it the next day. The consistency of the soup was right on not too thick at all, didn't need to any any more liquids even when reheating it the next day.
Great for the cold days.
