Christened the crock pot with this for round two of overnight cooking. I made a couple of tweaks - used fresh baby bella mushrooms instead of the ones from the jar, and added an extra can of cream of mushroom with garlic to round out the sauce. Cooked for about 8 hours on low, brought the crock pot to work, cooked about 2 more hours on low. Turned out great.

Hey, y'all. I'm a retired chef and I usually make stroganoff on top of the stove. My sister emailed me this recipe. I was reading through the reviews and saw that some people were having trouble with the cream cheese. You can use mascarpone, which is softer, slightly sweeter and very good in stroganoff and will stir right in. You can use beef stock and intensify the flavor by adding a scant 1/2 tsp of demi glace. Add minced garlic, or you can take the flat of large knife and lightly smash 3 big cloves, peel and toss in-will give the flavor and save you some time. Add fresh sautéed baby bella mushrooms when you add the cream cheese. To lower the fats, instead of sour cream use plain Greek yogurt and stir in at the very end. Garnish with chopped, fresh parsley (unless your kids have a green thing, like one mine did-he was a fussy buddy).
