Slow-Cooker Beef Carbonnade with Potatoes

Unlike French beef stews made with wine, carbonnade relies on the deep, dark flavor of Belgian beer.

Ingredients

  • 1 medium onion, sliced
  • 8 small red potatoes, cut into fourths
  • 2 1/2-pound beef round steak, cut into 8 serving pieces
  • 1 tablespoon packed brown sugar
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 package (1.8 ounces) tomato beef flavor (oxtail) soup mix
  • 1 can (12 ounces) beer

Steps

    Place onion and potatoes in 3 1/2- to 4-quart slow cooker. Arrange beef on top. Sprinkle beef with brown sugar, nutmeg, salt, pepper and soup mix (dry). Pour beer over all.

    Cover and cook on low heat setting 8 to 10 hours or until beef is tender.

    Spoon pan juices over beef before serving.

    If you prefer to skip the beer, use the same quantity of nonalcoholic beer, apple cider or beef broth instead. And if you can't find tomato beef oxtail soup mix at your supermarket, use a 10 3/4-ounce can of condensed tomato soup with 1 teaspoon beef bouillon granules instead.
