Slow Cooker Bacon and Corn Chowder

lb bacon, cut into 1-inch pieces

cups cubed peeled potatoes

cups Green Giant® Valley Fresh Steamers® Niblets® frozen corn (from 12-oz bag), thawed

medium onion, chopped (1/2 cup)

cup chopped carrots
1/2
cup chopped red bell pepper
1
can (18 oz) Progresso™ Recipe Starters™ creamy roasted garlic cooking sauce
1
can (14.75 oz) Green Giant® cream style sweet corn
1
tablespoon sugar
1
cup milk
  • 1 Spray 6- to 7-quart slow cooker with cooking spray. In 10-inch skillet, cook bacon until crisp; drain on paper towels. Discard drippings.
  • 2 Place bacon in slow cooker. Add remaining ingredients except milk; stir to combine.
  • 3 Cover; cook on Low heat setting 4 hours or until potatoes are tender. Stir in milk. Cover; cook about 30 minutes longer or until hot. Season to taste with salt and pepper.

Expert Tips

Garnish individual bowls of chowder with additional crumbled cooked bacon, if desired.

If corn is in season, use fresh corn cut from the cob instead of frozen.

        As other reviewers stated, the potato didn't cook in the 4 hrs. I suggest preparing for about 6 hrs cooking time and if it cooks sooner just turn to warm. I made this on a busy day and had to finish the cooking on the stove, which also thickened the sauce nicely. It had a good flavor and tasted much lighter than most chowders. My husband says it's a keeper.

        WOW! This is THE BEST chowder EVER, and it's so easy to make! I definitely agree with making the potatoes into smaller cubes; I didn't see the previous reviewer's comments and so didn't make them small enough. The potatoes were a little hard, but the flavor of the chowder was spot on - so delicious. I added 1 TSP of salt at the end to taste and it was perfect! This is a keeper and one of my all-time favorites.

        I recently had surgery and my daughter made this for my husband and I while I was down. OH MY GOSH!!! It was absolutely one of the best chowders/soup we have ever had. I am printing out this recipe and it will become a regular meal in our house. I have kielbasa in the freezer and will try it in the place of the bacon for a little different taste. Thank you Deborah for a wonderful recipe.
