Slow Cooker Apricot Chicken Tacos

Ingredients

Apricot Chicken

lb boneless skinless chicken breasts or thighs

dried apricots
1
cup Progresso® chicken broth (from 32-oz carton)
1
tablespoon Sriracha sauce
1
tablespoon vinegar
1
tablespoon soy sauce
1
cup chopped onion
1
clove garlic, chopped

Sweet Chili Mayo

tablespoons mayonnaise
3
tablespoons sweet chili sauce
1
teaspoon lime juice

Serve-Withs

Old El Paso® flour tortillas for soft tacos & fajitas (6 inch)
1/2
cup shredded lettuce
1/4
cup chopped tomato
4
teaspoons roughly chopped fresh cilantro
4
dried apricots, if desired, diced into very small pieces
8
lime wedges, if desired

  • 1 Spray 6-quart slow cooker with cooking spray. Add Apricot Chicken ingredients to slow cooker. Cover; cook on Low heat setting 6 to 8 hours or until chicken is falling apart.
  • 2 In small bowl, mix Sweet Chili Mayo ingredients; set aside.
  • 3 Use two forks to shred chicken, and drain excess juices. Serve chicken in tortillas topped with lettuce, tomato, cilantro and diced apricots. Garnish with lime wedges.

I only made the chicken portion of the recipe, but it turned out great. I used frozen chicken breasts and just put them in the crock pot while still frozen. The chicken shredded easily and was very moist. It goes well in a tortilla shell and on a salad. I think it would make excellent nachos as well.

I was excited to try this recipe, but was a little concerned the Sriracha sauce was going to add a bit more kick than the kids could handle, but it came out perfect with no real spicy level. I couldn't quite get 2 lbs of chicken, so i added a little more of all the chicken with the exception of the Sriracha sauce. A fantastic dish. The Sweet Chili Mayo was good as well, however I added about 3 or 4 teaspoons of lime juice vs just one. Definitely an easy recommendation on this one! Even my very picky daughter loved it!
