Ingredients

boneless skinless chicken thighs (about 1 lb)

boneless skinless chicken breasts (about 3/4 lb)

medium onion, chopped (1 cup)

cup peanut butter

can (28 oz) Muir Glen® organic diced tomatoes, undrained

cups Progresso® chicken broth (from 32-oz carton)

tablespoons grated gingerroot

tablespoons tomato paste

teaspoons curry powder

teaspoon crushed red pepper flakes

lb sweet potatoes (3 medium), peeled, cubed (about 4 cups)

lb small red potatoes (about 12), cut into eighths (about 2 1/2 cups)

  • 1 Spray 5- to 6-quart slow cooker with cooking spray. In cooker, layer all ingredients, spooning peanut butter in dollops.
  • 2 Cover; cook on Low heat setting 8 to 10 hours. Break up chicken before serving.

Yum! I love finding super-flavorful slow cooker recipes! I kept the sweet potatoes, but skipped the regular potatoes and added whole cheese tortelloni instead. It got really thick, very much a stew, almost more like pasta/sauce. Really good, a keeper for sure!

I made the recipe, but mixed the peanut butter with the liquid to thin it out before adding to the pot. I left the white potatoes out, and also added a little more salt, and a splash of hot pepper sauce. Yummmy.

The only change I made were to only use chicken breast. My husband and I thought it was ok. The leftovers have not been touched and we both thought we might have liked it better if we didn't know what was in it. It was very hearty, but not the best flavor.
