Ingredients

bag (1 lb) ready-to-eat baby-cut carrots
1
lb small red potatoes (2 1/2 to 3 inch), cut into quarters
1
jar (4.5 oz) Green Giant® sliced mushrooms, drained
1
small onion, cut into thin wedges
1
bag (16 oz) frozen cooked meatballs (about 32)
1
jar (12 oz) beef gravy
1
can (14.5 oz) diced tomatoes, undrained
Freshly ground black pepper, if desired

  • 1 In 4- to 5-quart slow cooker, layer all ingredients in order listed.
  • 2 Cover; cook on Low setting 8 to 10 hours. Before serving, gently stir stew.

Very tasty! I would add a second jar of gravy next time as it needed more liquid to cook properly. It definitely feeds 6 as we had yummy leftovers for another full meal.

I liked it, as did my kids, but they didn't want 2nds. My husband rates it a 5.5 out of 10. I enjoyed my leftovers! I don't think the canned mushrooms added anything (and don't think a jarred mushroom would be any different). I'd use fresh mushrooms next time if I use them at all. I had 3 russet potatos on hand, so used them (came to over 1 lb) and cut into lg "bite" sized peices. Used Trader Joe's Party Size Meatballs which come in a 20 oz bag (they're more kid-friendly in size). I too needed more than the called for gravy (since I had more potato and meatball) and used one 10.75 oz can of beef gravy, plus the gravy made from a packet (one 8 oz cup). Could have used more gravy liquid, and will next time. Didn't change anything about the carrots or can of tomatos. I cooked on Low for 1 hour, then High for 3 hrs due to my schedule, and it was cooked perfectly.

Very easy to make and family loved it. Im not crazy about mushrooms but still delicious. Not much of a cook either but all these receipes sure do help. No more plain boring hamburger helper.
