Ingredients

boneless pork roast (3 lb), trimmed of fat, cut into thin strips

teaspoon ground red pepper (cayenne)

sandwich buns, split

  • 1 In 3 1/2- to 4-quart slow cooker, mix all ingredients except buns.
  • 2 Cover; cook on Low heat setting 6 to 8 hours.
  • 3 Spoon about 1/3 cup pork mixture into each bun.

Pack any leftover pork mixture in a plastic freezer container and freeze for a day when you don't have a lot of time to prepare a meal. Thaw it in the refrigerator overnight or in the microwave in a microwavable dish. Serve on garlic toast or Texas toast.

I really enjoyed this recipe, and with only two people in the house, we had plenty of leftovers. I got a little bit creative; instead of using garlic powder, I used 3 minced garlic cloves (because I love fresh garlic), and I wanted to do pulled pork, so I didn't slice it at the beginning. I also sadly found that after I got all my ingredients in, my slow cooker didn't work, so... another way to cook this is to put the roast in a baking dish in the oven at 275 for about 6-8 hours. I was skeptical on the sauce with so much ketchup, but I thought it turned out great! Maybe next time, I'll do half BBQ sauce, half ketchup.
