Skillet Chicken Divan (Gluten Free)

In just over half an hour, busy cooks can put dinner on the table. Chicken, broccoli and rice make it a colorful meal-in-one.

boneless skinless chicken breasts (about 1 lb)
Water called for on brown rice package for 1 cup uncooked rice

tablespoons Dijon mustard

teaspoon salt

teaspoon pepper

cup uncooked quick-cooking brown rice

cups Green Giant® Valley Fresh Steamers™ frozen broccoli florets, thawed

cup shredded Cheddar or American cheese (2 oz)
  • 1 Melt butter in 10-inch nonstick skillet over medium-high heat. Add chicken; cook 1 to 2 minutes on each side or until browned.
  • 2 Remove chicken from skillet. Add water, mustard, salt and pepper to skillet; stirring with wire whisk until blended. Heat to boiling. Stir in rice; return to boiling. Place chicken pieces and broccoli over rice. Reduce heat to low; cover and simmer about 10 minutes or until most of liquid is absorbed and juice of chicken is clear when center of thickest part is cut (170°F).
  • 3 Sprinkle with cheese; cover and let stand 5 minutes.

Where's the curry? My chicken divan recipe uses curry. Maybe adding some would appease those who've called it bland. I also think I'd cube up the chicken personally. And will definitely use the chicken broth.

This recipe was OK for a one time use. This will definitely not make it into our recipe box. I love dijon mustard so of course I thought this might be a great change.. Not. Kind of bland if I were you , doctor it up. read the below comments. As for my family and I this is a throw out.

I made this last night for dinner- we ran out of propane on the grill so I needed an easy recipe in a pinch. I read the reviews that this recipe was bland, so I used chicken broth instead of water, added garlic and extra dijon. I also used mozzerella and parmesan cheese instead of cheddar. Used fresh broccoli instead of frozen. My husband and I liked it. I might try to season the chicken a little more if I make this again. Its a very easy weeknight dinner.
