Ingredients

lb lean beef boneless sirloin steak

bag (1 lb) frozen stew vegetables, thawed
1
can (15 oz) chunky tomato sauce with garlic and herbs
1 3/4
cups Progresso® beef flavored broth (from 32-oz carton)
2
cans (5 1/2 oz each) spicy eight-vegetable juice

  • 1 Remove fat from beef. Cut beef into 1/2-inch cubes.
  • 2 Spray 10-inch skillet with cooking spray; heat over medium-high heat. Cook beef in skillet about 10 minutes, stirring occasionally, until no longer pink.
  • 3 Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer 5 minutes, stirring occasionally.

As an added item, I added a biscuit mix over the top and finished as directed. Very good recipie great as a left over.

My family loved this recipe. I was very pleased by how fast and easy it was to make. I love beef stew but I hate waiting for hrs for it to cook. This was done in less that 30 min. I also agree with some of the other reviews, it is more like a soup than a stew. However, if you reheat it the next day for leftovers it does seem to thicken up. I will make this again!!!!

I thought this was pretty good. I actually loved the spicy V8 in it and I was surprised by that. My frozen bag of veggies that I bought were not great. The bag said potatoes, carrots, onions and celery and there was not one potato in it, so I threw crackers in my bowl. It is more soupy to me than like a stew, but it still tasted good. So like spicy tomato soup with veggies in it. I'm glad I tried it. I will hope to find a better bag of frozen veggies next time. Also, I could not find chunky tomato sauce with garlic and herbs, so I used stewed tomatoes with basil, garlic and oregano. I'd make it again.
