Simply stove stock chicken with apricot and white rice

A chicken tender, sauteed in butter, garlice, soy sauce and simmeered in apricot marmalade or your choice of marmalades.

LB Chicken tenders. uncooked

TBS approximate Soy Sauce, or substitute terriyaki sauce

large clove fresh garlic

pkg Rice from instant or make traditional style adding time appropriately

small jar (8 oz) Marmalde of your choice try orange, apricot or your preference

cup frozen peas
  1. In a medium to large frying pan (non stick perferred) on low heat, melt butter adding garlic (smashed or chopped)
  2. when fully melted add uncooked chicken, space evenly and cook to a light golden brown (about 6-8 minutes) on each side; Add soy or terriyaki sauce to chicken
  3. Then add the marmalde, stirring for coverage of chicken. Cover, reduce heat to low, and simmer covered for approximately 15 minutes
  4. Meanwhile prepare instant rice according to box directions. When cooked, remove from burner and add 1 cup of frozen peas to hot rice, stirring, then cover while chicken cooks.
  5. Check on the chicken to see if sauce is bubling and beginning to thicken. If so, turn off burner and remove pan from heat to settle.
  6. Serve white rice with peas adding chicken and marmalade on top.
